O-POACHIE

Ah, breakfast! 

The simpler the better. And why not fight the good fight and go organic:

RECIPE

  • 2 Organic Eggs
  • 1 Organic Sprouted Whole-Wheat Tortilla (or other organic wrap)
  • Organic Apricots
  • Drizzle Organic Olive Oil
  • Crunchy Salt

If you've got one of those handy trays that holds poaching cups over boiling water in a pan, yay for you! They are fantastic, because you can use the cups to steam your apricots, too! They are wonderfully soft and sweet this way!

No poaching trays? Use a skillet. Boil about 1/4 inch water, reduce heat to medium, add a little olive oil to help move the eggs off the pan later. Splash sides and tops of the eggs with a spatula until egg whites are solid and there are no runny bits. Your runny eggs preference is yours to be sure, but cook at least 2 minutes. 

Simply place an uncooked tortilla on a plate, add eggs and apricots. Drizzle with olive oil and sprinkle with salt. Of course you can add other things like:

  • Avocado
  • Hot Sauce
  • Hash Browns
  • Chopped Almonds
  • ANYTHING YOU LIKE!
